Veggie Burger
Ingredients
- 1-2 shoots of kale
- 1 cup of dry quinoa
- 2 sweet potatoes
- 1 can of black beans
- Half of a red pepper
- Half of an onion
- 2 - 3 tsp of adobo
Directions
- Preheat oven to 400 degrees (skip this if cooking on stovetop/grill)
- Cook quinoa
- Microwave or boil sweet potatoes
- Chop red pepper, onions and kale and toss into a mixing bowl
- Drain black beans and add to the mixing bowl
- Add the sweet potatoes and quinoa to the bowl
- Add adobo to taste
- Mix and mash all the ingredients together
- Pour mixture onto a pan and form into patties
- Bake for 20-30 minutes or cook on stovetop/grill until golden brown and firm
