Vegetarian Chili
Ingredients
- 1 can of pureed pumpkin
- 1 tomato (diced, or 1 can of diced tomatoes)
- 1 cup corn (1-2 cobs or a can - substitute with hominy)
- 1 can of black beans
- 3 chili peppers (diced)
- 1 Onion (diced)
- 3/4 cup dried quinoa
- 1 tbsp Chili Seasoning
Directions
- Cook quinoa
- Combine seasoning, pumpkin, tomatoes, quinoa, and black beans in a large pot and bring to a simmer
- Over medium-high heat, saute onions, corn, and peppers until cooked
- Add the onions, corn, and peppers to the chili and simmer for 5 more minutes
