Sweet Potato Hash Browns



  1. Remove skin from potato
  2. Shred sweet potato using a hand grater
  3. Soak sweet potato in water and drain off liquid, repeat until water is clear
  4. Squeeze water out of potatoes and lay to dry in paper towel for 10 minutes
  5. Heat oil and butter in skillet over medium-high heat
  6. Add salt and pepper to potatoes and scoop into skillet, flatten
  7. Lower heat to medium-low
  8. Cover and cook for 5 minutes or until edges become brown
  9. Flip (may need to use a plate) and cook for another 2 - 3 minutes
