Sweet Potato Hash Browns
Ingredients
- 1 sweet potato
- 2 tbsp oil
- 2 tbsp butter
- 1/4 tsp salt
- 1/8 tsp pepper
Directions
- Remove skin from potato
- Shred sweet potato using a hand grater
- Soak sweet potato in water and drain off liquid, repeat until water is clear
- Squeeze water out of potatoes and lay to dry in paper towel for 10 minutes
- Heat oil and butter in skillet over medium-high heat
- Add salt and pepper to potatoes and scoop into skillet, flatten
- Lower heat to medium-low
- Cover and cook for 5 minutes or until edges become brown
- Flip (may need to use a plate) and cook for another 2 - 3 minutes
