General Tso's Eggplant

Ingredients

• 1 eggplant
• 1 red pepper
• 1 tbsp soy sauce
• 1 tsp salt
• 3 tbsp General Tso's sauce

Directions

1. Dice eggplant and red pepper
2. Add salt
3. Saute over medium heat until the eggplant is cooked
4. Stir in soy sauce and General Tso's sauce and continue to cook over medium heat for another minute
