Eggplant Parmesan



  1. Slice eggplant into 1/4 inch circles
  2. Bake in the oven at 350 for 20 minutes
  3. Coat an oven safe dish with a non-stick cooking spray
  4. Make layers of eggplant, tomato sauce, and cheese until you run out of eggplant
  5. Cover with foil and bake at 350 for 30 minutes, or until a knife easily goes through all layers
  6. Remove foil and bake for another 10 - 15 minutes
