Eggplant Parmesan
Ingredients
- 1-2 large eggplants (or zucchini)
- 16 oz tomato sauce
- 1/2 cup shredded cheese
Directions
- Slice eggplant into 1/4 inch circles
- Bake in the oven at 350 for 20 minutes
- Coat an oven safe dish with a non-stick cooking spray
- Make layers of eggplant, tomato sauce, and cheese until you run out of eggplant
- Cover with foil and bake at 350 for 30 minutes, or until a knife easily goes through all layers
- Remove foil and bake for another 10 - 15 minutes
